Baked Parmesan Chicken
Ingredients
- 3lbs boneless, skinless, Chicken
- 3Tbsp Butter
- 1/2c grated Parmesan Cheese
- 2Tbsp Flour
- 1c Milk
- 1/2c shredded Swiss Cheese
- 1/4c Bread Crumbs
- Salt and freshly ground Pepper
- Preheat oven to 350. Season chicken with salt and pepper.
In large frying pan, melt butter
over medium heat. Add
Chicken and cook, turning, until browned, about 10
minutes.
- Sprinkle 1/4 cup of the Parmesan Cheese over bottom of
a 13x9x2-inch baking dish. Arrange Chicken in dish.
- In same frying pan, whisk flour into pan drippings.
Cook, stirring, for 1 minute. Gadually add Milk and cook stirring constantly, until smooth and thick.
Remove from heat and stir in Swiss Cheese.
Pour sauce over chicken.
- Top chicken with remaining 1/4 cup Parmesan cheese.
Sprinkle with bread crumbs. Bake for 45 minutesor until chicken is tender.
Suggestions and Tips
- For the milk, I like to use whole milk but you may
use any kind you like. I find that the whole milk
helps to make a richer flavor over all.
- For the bread crumbs, I use regular sandwich bread or
a flavored bakery bread and use the food processor
to chop it until it's as fine as regular bread crumbs
- Side dishes, I like to serve a vegetable flavored rice
with the Parmesan Chicken. It adds to the flavor of
the Parmesan chicken instead of clashing with or taking
away from the rich flavor of the chicken.
